During Thanksgiving, people tend to smother themselves with turkey, stuffing, and all the other good stuff. For senior Lauren Neilson it means having to give that all up for some healthy vegan food. She actually prefers it that way, for the purpose of living a healthy life.
“I started being a vegan a month ago,” Neilson said, “I decided that I wanted to live a long and healthy life and that I needed to change my diet.”
Although her family questioned if she could keep up with being a vegan during Thanksgiving, she proved them wrong by not even tasting anything the Neilson family made.
“We actually thought that she wouldn’t be able to last this long, but she has and we’re really proud of her,” mother Dawn Neilson said, “ I try and encourage her in everything she does even though she’s the only vegan in the family.”
